SLOW FOOD.
Slow Food is global, grassroots organization, started by Carlo Petrini and a group of activists in the late 80’s, with the initial aim to protect local food cultures and historical traditions, defend agricultural biodiversity, return to the enjoyment of eating together around the table, and protect against the encroachment of fast and packaged food.
Slow Food has grown to involve thousands of projects and millions of people in over 160 countries, working to ensure everyone has access to good, clean, and fair food. The movement has evolved to embrace a comprehensive approach to food that recognizes the strong connections between plate, planet, people, politics, and culture. Slow Food means living an unhurried life, taking time to enjoy simple pleasures, starting at the table.
In 2004 Slow Food opened the University of Gastronomic Sciences in Pollenzo, Italy – the first university to focus on the organic relationships between food and cultures – where I will begin my studies. Tomorrow!!
